Recipe #33; Honey Cake


I got this recipe from my old friend who has been called Nemo. I sometimes call him Kevin, or Russell, or Mr. Fredricksen - for he has many names.


LIST OF THE ITEMS YOU WILL NEED TO CREATE THIS DELIGHT:
2 cups AP flour
2 tsp baking powder
smallest pinch of salt, I have heart failure. If you can tolerate it, use a half teaspoon
1/2 cup softened butter
1 cup honey
2 large eggs
1/2 c vanilla yogurt
2 tsp vanilla


Soften the butter, then cream the butter and honey.




In a mixing bowl, whisk the first three ingredients until well mixed. Set aside




Add the eggs, one at a time; and beat until well incorporated.




Add the yogurt and vanilla, and beat until mixed well. Then add the flour mixture.



Mix on low speed until you have a nice batter


Grease your favorite cast iron pan - I used about a tablespoon of butter this time


Pour in the batter


Throw the cast iron into your oven heated to 350 degrees Fahrenheit for 30-35 minutes.


When a toothpick comes out of the center clean, she is done.


Let it cool on a wire rack


Enjoy with fruit, lots! or none at all. If you prefer, add a dollop of cream

OR

Have it with ale, cheese, and dwarves.


Pretty darn good. Moist, not too sweet, but very rustic.
